 Creamy Sweet Potato Recipe (Sept 2024 Edition)

Perfect for chilly evenings or as a comforting lunch, this recipe combines the natural sweetness of sweet potatoes with aromatic spices and creamy coconut milk. It's a delightful blend of flavors that's not only delicious but also packed with nutrients. Ingredients:

  • 2 large sweet potatoes , peeled and cubed
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup of coconut milk
  • 1 tbsp olive oil
  • 1 tsp ground cumin
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional but recommended :) )

Cooking Instructions:

  • Heat olive oil in a large pot over medium heat. Add onion and garlic , sauté until soft.
  • Add sweet potatoes and cumin. Stir and cook for 2 minutes.
  • Pour in vegetable broth. Bring to a boil, then reduce heat and simmer for 15-20 minutes until sweet potatoes are tender.
  • Remove from heat and blend until smooth using an immersion blender.
  • Stir in coconut milk. Season with salt and pepper
  • Serve hot, garnished with cilantro if desired.
